Egg Day 2010

This year Egg Day was a little more chaotic than most. It began at 6:30am when the alarm clock buzzed and got us all out of bed to start the day and go our separate ways: Chris to the Chaplaincy Breakfast and the boys and I to the northbound rest stop’s coffee shack.

It was also the first time in I-can’t-remember-how-long, that we woke up to sunshine! It was a beautiful sunny day with a high of 71! This is a HUGE deal since the high on Thursday barely got to 50 degrees!

This not only made our day much cheerier but also made for much happier, thankful and generous patrons at the rest stop! People also like that we have homemade cookies and Easter eggs for the kids… (The boys and I stuffed plastic Easter eggs for our first Egg Day task)

egg day 02 egg day 03After our shift was over, we came back into town and met Chris at Nipp’s for a delicious bacon cheeseburger, fries and milkshake special! Everyone else had the same idea, because they were PACKED! But nothing says sunny day like a Banner Special at Nipp’s…

Now being adequately fed, we popped over to the church to do a bit of yardwork and set up for Easter services in the morning. The boys worked really hard and the grounds look much better!

Then we headed home to finish the rest of our traditional Egg Day celebrations…

In reality, I suppose Egg Day really started yesterday when I hard boiled our eggs and started the first batch of Jello eggs.

egg day 01First thing was to make two egg bakes for Easter breakfast at church and complete the rest of the Jello eggs.

Egg Day also means a whole lot of egg shells!

I have been looking forward to Egg Day all year because this year we have our own eggs! But the girls stopped laying 6-8 eggs a day two weeks ago and dwindled down to just 2-3 a day!!! This meant I had to hoard a whole bunch of eggs in order to avoid having to make a trip to the store to buy boring old white eggs. But we did it! I love the way they turned out! With brown eggs you never know what you’ll get…

Chris’ eggs. He just had to be difficult and wouldn’t (or couldn’t) choose a favorite. :o)

The egg reminds us of the new life we have in Christ and that we celebrate at Easter. “We were therefore buried with Him through baptism into death in order that, just as Christ was raised from the dead through the glory of the Father, we too may live a new life.” Romans 6:4

So glad you had such a fantastic Egg Day prep!

Yep, we colored eggs here too (our brown ones, and even a blue one!) and were really looking forward to a sunny day to do an egg hunt......but as I'm sure you know, it RAINED!! We had an egg hunt anyway!

Congratulations to the boys on their purple belts! That's exciting! We are going to be doing a Target Focus Training class with a friend, which is a self defense program. Funny thing is, Hannah's totally into it!!

It's good to see things going so well with you guys!
